After spending our holidays in Italy, we are full of inspiration. Not only for beautiful collections, but also for home deco and yummy Italian dishes.
Johanna made her favourite dish 'Pasta alla Puttanesca' when we were visiting her and we want to share this authentic recipe with you!
Even if your fridge is kind of empty, you will be able to make this dish :-)
Ingredients (for 4 p.):
- 450 g spaghetti
- olive oil
- 4 garlic cloves (peel and finely slice them on beforehand)
- 3 chopped anchovy fillets
- 2 sliced fresh red chillies (do not remove the seeds)
- a handful of black olives (without pits)
- 2 handfuls of cherry tomatoes (slice them in halves)
- a small bunch of fresh basil
- Flakes of parmesan cheese (plenty!)
Now you have prepared the ingredients, pour yourself a drink and let's start!
First, bring a large pan of salted water to the boil, then add the spaghetti and cook until it is 'al dente'. Not too soggy or too hard! Overcooked pasta will simply ruin your meal ;-)
In the meantime, place a large frying pan on medium–high heat with a good splash of (Italian) olive oil, followed by the garlic, anchovy and chillies. Add the olives and stir it all for 2 minutes, or until the garlic starts to turn golden and the anchovies melt into the base.
Drain the pasta, do not forget to reserve a cupful of cooking water! Add the basil to the sauce along with the pasta and a splash of the reserved cooking water, to loosen up. Then add the cherry tomatoes, and cover the frying pan with a lid. Cook the entire dish for 4 minutes, keep your spoon ready to taste (or that it needs seasoning to enhance the flavour)!
Put it into a large bowl, which you can put in the middle of the table. And put the flakes of parmesan cheese in a separate bowl, so your guests can add as much as they like.
Oh and to be fashionable in the kitchen as well, we have a supercute, classy apron. You do not even have to take it off when taking place at the table, since it is almost like wearing a Little Black Dress with its pearls.
